Include requestId in Apollo server logs

After setting up the OpenSearch logs for the current DMP Tool, I realized we are going to want to add a requestId to the logs so that we can easily track activity of a request.

Need to add a Request Id to the Apollo context and then include it in the formatLogMessage function.
