There is a bug on gnome, that are randomly triggered, even with steam. Once it starts, even if you close what triggered it, the behavior continues repeatedly.
Whatever bug it is, are in the xdg-desktop-portal-gnome package. By removing it, it fixes the issue.
I would suggest to add the removal and prevent the installation of it on updates. But not it's dependencies, that way, everything continue working properly.
If the dependencies are removed too, the only thing I noticed were that dark theme were not properly applied on some places.
