Upgrade WaveDiff to better handle plotting multiple model metrics in the same run directory

WaveDiff's implementation of glob is limited and should be upgraded to allow for various configurations such as multiple metrics in a single directory or a user wanting to generate a single plot at runtime after the completion of the training and metrics pipeline tasks for multiple models.
