HydroMT-Wflow version checks

I have checked that this issue has not already been reported.
I have checked that this bug exists on the latest version of HydroMT-Wflow.

Current behaviour

Github tests and docs workflows often hang on linux with python 3.11. We should investigate why this behavior happens and improve our tests.

Desired behaviour

No more hanging
