Add sample app for ESP32-H2 (Thread)

Now that ESP-IDF v5.1 is landing in the chip-build-esp images would be good to add sample apps for thread on ESP32-H2 and ESP32-C6?

Espressif devkits are generally available now with limited stocks atleast, with C6 easier to find stock than H2.

Indeed, this also applies to ESP32-C6 too when using Thread instead of WiFi (though they can technically co-exist).
