Right clicking with a bucket of water in a purified chunk makes it so water gets placed no matter what. The action of placing water overrides Vanilla GUI's (say, if you right click an anvil with water bucket, the anvil doesn't open and you just place water on it), and if a block happens to be between you and the vanilla GUI block, that block gets replaced with water which can cause item loss if that item happens to be something like a chest or output chest.
I don't have recording software right now, but here's a demonstration:
In this screenshot, there's a dirt block in between me and the anvil. I am holding a bucket of water in my hand and I am going to right-click the anvil.
The anvil has been right clicked and notice how the dirt block is now just water. This can seemingly happen with any block, chests included.
