Poetry: spikeinterface-poetry! And, now with spikeinterface[full] support

Made a poetry wrapped package of spikeinterface a while back, and thought it was fitting to mention it here.

As requested by @alejoe91 and @samuelgarcia, from my poetry PR, I have migrated the poetry configuration that implements bare-bones spikeinterface. The previous version was spikeinterface[full] by default.

I also added experimental Python 3.10 support.

Try it out:

pip install spikeinterface-poetry

To install full:

pip install spikeinterface-poetry[full]

We are currently in the process of wrapping up several PRs and issues for the next release (scheduled by the end of next week).

One thing I noticed from your full installation is that also sorters are installed (https://github.com/caniko/spikeinterface_poetry/blob/trunk/pyproject.toml#L108-L113), while our full installation only installs packages to allow one to use the different submodules (https://github.com/SpikeInterface/spikeinterface/blob/master/requirements_full.txt)

I think I'd rather keep it that way, since sorter installations are 1. hard to maintain and 2. docker images are now available for (almost) all sorters.
