During high-intensity recruiting periods emails are usually switched off to avoid the flood of notifications, having one update per day with the summary of the new applications instead of one email per application could be a better solution for that.
Also consider including more details in the update email, like name/surname/year and course and group the entries by area of interest, so that the recruiters have an easier time parsing and using the information

@alecello Names are not included due to GDPR, so you don't accidentally keep a copy of the data in your inbox even if the applicant deleted the application
