Veg(an) Burgers

Vegan Burger

Time

  1. Prep - 5-10 min
  2. Oven - 55-60 min
  3. Cooling - 15-40 min
  4. Frying - 10-15 min

Total time - 1 hr 25 min - 1 hr 55min

Ingredients

  1. 1/2 cup of chopped yellow onion
  2. 1/4 cup of chopped broccoli
  3. 1/4 cup of chopped carrot
  4. 15.5 oz of precooked lentils (a can of lentils works too)
  5. 1/2 cup of uncooked brown rice (preferably quick cook)
  6. 3 tablespoons of olive oil
  7. 1 & 1/2 cup of water
  8. 1 teaspoon of salt
  9. 1/2 teaspoon of black pepper
  10. 4 whole grain buns
  11. [optional: 4 slices of vegan cheese or (non vegan: cheddar cheese)]

Steps

  1. Pre-heat oven to 350-375 degrees fahrenheit
  2. Mix yellow onion, broccoli, carrot, lentils, salt & pepper in a casserole dish
  3. Stir in 1 tablespoon of olive into mix (yes 1, we're saving the other two)
  4. Stir in uncooked brown rice
  5. Stir in water
  6. Place dish in the oven for 55-60 minutes
  7. Once time is up, stir to let out heat
  8. Place casserole dish in refrigerator for 40 minutes [or for the rushed, freezer for 15 minutes]
  9. Once cool, mush mixture into patties
    • A. Use your hands / fists
    • B. If you prefer not to do that, use a mallet
  10. Set stove to medium heat & drop in 1 tablespoon of olive oil
  11. Put in a patty or two & fry for 4-6 minutes on each side (or until dark brown / crispy)
    • A. Put cheese over completed side for a nice melt
  12. Place on bun
