Total time - 1 hr 25 min - 1 hr 55min
- 1/2 cup of chopped yellow onion
- 1/4 cup of chopped broccoli
- 1/4 cup of chopped carrot
- 15.5 oz of precooked lentils (a can of lentils works too)
- 1/2 cup of uncooked brown rice (preferably quick cook)
- 3 tablespoons of olive oil
- 1 & 1/2 cup of water
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 whole grain buns
- [optional: 4 slices of vegan cheese or (non vegan: cheddar cheese)]
- Pre-heat oven to 350-375 degrees fahrenheit
- Mix yellow onion, broccoli, carrot, lentils, salt & pepper in a casserole dish
- Stir in 1 tablespoon of olive into mix (yes 1, we're saving the other two)
- Stir in uncooked brown rice
- Stir in water
- Place dish in the oven for 55-60 minutes
- Once time is up, stir to let out heat
- Place casserole dish in refrigerator for 40 minutes [or for the rushed, freezer for 15 minutes]
- Once cool, mush mixture into patties
- A. Use your hands / fists
- B. If you prefer not to do that, use a mallet
- Set stove to medium heat & drop in 1 tablespoon of olive oil
- Put in a patty or two & fry for 4-6 minutes on each side (or until dark brown / crispy)
- A. Put cheese over completed side for a nice melt
- Place on bun
