I'm looking to build InnoSetup installers with Gitea Actions CI, for which the Docker workflow is not ideal; as such, I've inelegantly adapted the contents of this repository into a GitHub Action, which you can find here: https://github.com/Operese/innosetup-cross-action.
Since this repository is under the CC0 license, I wanted to check with you before formally releasing the action under any other open source license. My intent right now is to use the MIT license, but if you would prefer that I use another license, I would be happy to do so as well.

The license dates back to the original fork apparently 10 years ago(!). My understanding of CC0 is that it is spiritually the same as public domain, so you are entirely free to relicense your work under whatever you choose.
Thus I take your question to be a mere courtesy (thank you), in which case I will say that MIT is a great license, but I have no strong feelings on the matter. Feel free to choose whatever you think is best.
