re-write the sketchybar config as simple as possible.
Make it make sense.
make it use no .sh scripts within the config.

Then, use sketchybar-lua.

Fixes:
Pass through nix info such as packages or locations.
toggle-sketchybar writeShellScriptBin should be usable within the config.
