Settings stuck loading, tried reinstalling many times, embeddings.json wouldn't appear at first, now I can't get anything to work

Hi, I'm a tech newb and I don't really know what I'm doing, but at first I was getting errors because my embeddings.json file wouldn't appear and I never saw the "create embeddings" button that I read about when I was troubleshooting via google. After deleting folders and files and restarting and reinstalling many times, now as soon as I select OpenAI as my AI in order to put in my API key, the settings are stuck loading forever. I've watched youtube videos and troubledshooted for hours and I can't figure it out :/

I have a Mac and the latest version of the plug in (i'm assuming since I just reinstalled it)
