Using newer docker image versions

First off, many many thanks to bsmithio - this is the very first time I have been successfully able to generate a network dashboard despite so many many tries to do the same.

Some questions:

1. The docker compose yaml file explicitly indicates the version number of the images for mongodb/elasticsearch/graylog that work beautifully well together. But I update any of them to the more recent versions something just breaks down (starting from a clean slate with new bind volumes)
2. Grafana keeps showing a ElasticSearch version issue for versions below 7.16, which I am afraid to touch due to (1) - any ideas?
3. For interface block logs, I would also like to see hostnames instead of IP addresses, can anyone point me towards what I could use for this ?
