Optimise script size for PlutusV3

Why

The script size, when we move to PlutusV3, without changing anything, are too large! (TODO: How do we know?). We want to make it smaller!

@locallycompact mentioned we should "fix V2 first" and created PR #1673

We found that using plutus core AST version 1.1.0 makes the scripts smaller and this is available with plutus v3

This item has no inherent motivation. I would suggest to close it and use issues like #1543 to motivate a potential switch to PlutusV3 (supposedly better performance, but #1092 may be better still).

#1680 contains some context of how we considered switching to PlutusV3 for #1543, but ended up using aiken.
