Enable IAVL v2 in store/v2

Proposed Feature

IAVL v2 is marked as a supported by store/v2 in the config, but it is effectively not the case:
https://github.com/cosmos/cosmos-sdk/blob/05fb492/store/v2/root/factory.go#L149-L150
We should enable it.
