When you try to access an app without logging in on Umbrel, it redirects to a login page on port 2000 (which is strange because port 2000 is not exposed, yet the page still loads). If you enter the password, you get a 404 error.

Im not able to reproduce this currently (in version 1.4.0-beta.1 that I just released).
When I install an app (I picked Immich as an example) it opens it on port 2283. You are right that the dockerfile for Umbrel does not expose port 2283, but the app Immich will be a seperate container (with a seperate Dockerfile) and that one will expose 2283.
Then I click logout in Umbrel, and refresh the page on port 2283, I can still access the app.
Can you try the same and see if you get the same result?
