Add docs generation to Github actions

Now that we have buildable documentation, we should add an automatic build in the GitHub Actions.

Describe the solution you'd like

I would create a separate task than the current as it doesn't require the full dependency stack to be built, just a few packages (defined in docs/requirements.txt).
