hiding info to avoid reviewer bias

Reviewers can currently see other reviewers' data (their tag review status) as well as the confidence score of a model detection.

It should be possible to hide these fields with a single button (and we need to think about hiding the species ID itself too) by default and its state should be remembered (and the cookie policy should reflect this).
