[Discover] Moving away from "document" label

Discover historically has been optimized for showing documents in Elasticsearch. However this is no longer accurate since with the introduction of text-based query languages (which is currently not GA, but for sure will be), non-document data can be displayed. We, therefore, suggested using "records", which should be a better fit for the use cases beyond documents.

Currently, we are only using records in the field statistics:

We've got several "Documents" in the "Document explorer"

• The "Documents" tab

• The "Document" column (this is a summary of the row's record)
  I'm not shore "Records" would be a good fit here, or maybe we can find a better naming

• Documents tab -> Search? Data table? Data explorer?

• Document column -> Summary?

For other "document" naming in this area, I think records is fine

We labeled our new data table in Discover "Document Explorer" --- it was also in the news and in Advanced settings

if we decide to rename, record explorer, I'm thinking of guiness book of world records ... or music records ...
how about .. "Data explorer"?

Instead of using a proper noun, how about referring to it as the "data table".

Document Explorer also appears on the Advanced Settings page.

When you expand a record, which is just available if it's an Elasticsearch Document, we use "document" all over the place, also features like "Single document" or "Surrounding documents". So the question would be should this be record-ifyed? It would mean lot's of documentation and established wording in this area needs an overwork
