Use Pau's dataset + excerpts + prompt to run through Bedrock Mistral models to establish Mistral baseline
Tune the prompt to better suit Mistral models + look into documentation to force output in json format & finetuning
Analyze the result and identify the best model + prompt & identify shortfalls

Models (In the order of cheapest + fastest to latest + most intelligent):

Mistral 7B Instruct
Mistral 8x7B Instruct
Mistral Large
Mistral Large 2
