Enable Edge to Kafka

We want to demo edge to kafka with the pos/kds app because it is easier and more generally valuable, and relatable to new customers.

We need to deploy this on a dedicated cluster and get it enabled. Which dedicated cluster should we use?

This would change the AppID, so we might want to do this before we publish to the app store if possible.
