Add OpenAPI validation tests to CI to prevent bugs like this:

I chose openapi-spec-validator because of it supports 3.1 version of OpenAPI and uses Python (easy to fix or improve if needed).

I added Spectral as second validator for backup reasons...

Third validator is swagger-editor-validator, which is available on GitHub Marketplace and has most stars/installations
