[macOS] 1.1.0: ctrl+alt+key acting as option+key

I am using an Azerty Keyboard layout, and since the last update, I am having trouble with Ctrl+Opt (or Ctrl+Alt) sequences.
In versions 1.0.0 and 1.0.1, I could press Ctrl+Opt+m, and it would behave like Ctrl+Alt+m. I could press Opt+m, and would print "µ".
This is how it works in both Kitty and Wezterm, and it is very handy, because it lets me have Ctrl+Alt keybindings in Neovim while letting me input characters that require the option key in the azerty layout, such as ~, [, ], { and }, which, as a developer, I need to type quite often.

Having the option key always work as 'alt' is a no-go for me, as it prevents me from inserting {, }, [, ] and so on.
Having the option key always work as 'option' means I lose all my Ctrl+Alt keybindings (there is a few).

Now, since 1.1.0, Ctrl+Opt sequences seem to always drop the Ctrl modifier, as seen in the screenshot.

Note that Ctrl works as expected, unlike what I saw in other reports about the Ctrl key on macOS. The problem occurs only when paired with the Option/Alt key.

A way of reproducing the issue is to add some Ctrl+Alt keybindings in a neovim config, and see them not being triggered when pressing the corresponding keys, such as:
