Please note that I have read the issue regarding bugs being a priority. If I were able, I'd submit this as a pull request myself. After searching the issues though, I was surprised to find that this has not been requested yet (as far as I could find). I believe this is an important enough feature that the idea should at least be documented even if the feature cannot be added in the foreseeable future:
Describe your feature request
Many Markdown editors I've tried work just like FSNotes in that, by default, HTML stored in the clipboard is pasted as plain text, which I believe is the norm. Some markdown editors, however, also have the very useful, time-saving feature allowing users to paste HTML/rich-formatted text as Markdown (at least where possible, else HTML tags are retained when there is no equivalent in pure markdown syntax).
Maybe a fellow user (much better-skilled than myself and with more free time than you) will read this, agree, and open a pull request to make it happen! 🤞🏽
That said, thank you for sharing this with the community! It's hard to find well-made, native open source markdown editors for Macs, and this one checks all those boxes and exceeds expectations!
