I would use:

/doc/{docId}/tables (listing tables)
/docs/{docId}/tables/{tableId}/columns (listing columns)

And generally the full suite of endpoints if available.

FYI, I've published grist-js here: https://github.com/ben-pr-p/grist-js

It's auto-generated from the OpenAPI spec, so it contains all endpoints
