Describe the bug
At the simple-asset-go tutorial it's mentioned to put the CC_NAME value to simple-asset-go while on the docker-compose for the test network it assumes all docker images to start with fpc-.

Solution
Edit the tutorial readme and replace every simple-asset-go with fpc-simple-asset-go

@osamamagdy I believe PR #770 solves some of your reported issues. Can you check please and report back if we need another fix?
