possible to run without persistent storage?

I omitted setting the storage block and assumed it would run in-memory only. It appears to create a default PVC etc. Is it possible to turn off the usage of PVC altogether?

This is not yet possible as the operator will always attempt to create a PVC, the intention is for persistence to be default, I'm elbow deep refactoring to support zero downtime upgrades, however given you've now asked for this feature, I'll get this on my shortlist.
