change the consuption directory (docker on Raspberry pi)

My goal is to add a second consumption directory. It is an experiment where I set the consumption directory to a tmpfs directory.
on my raspberry pi.

How do I change the Consuption directory? I do not understand how the docker-compose.yml set that directory. Could I simply replace the volume entry? According to the doc, I have to modify the docker-compose.env but there is no directory var.
