add jupyterhealth org to the Jupyter Enterprise

http://github.com/jupyterhealth/ is a GitHub org collecting some activities related to Jupyter and JupyterHub in health-related settings. It is part of the JupyterHub subproject, so the org should presumably be added to the Jupyter GitHub Enterprise. I'm not sure what the process is for that.

Oh nice! Was it recently adopted by JupyterHub? I know there was conversation around it potentially becoming an official part of Jupyter.

Yes, officially yesterday. Because it is an activity of mostly JupyterHub folks doing JupyterHub-related things, we decided to adopt it in JupyterHub rather than as an independent subproject with its own council, etc.
