Update documentation regarding cloud products #3097

https://mybinder-sre.readthedocs.io/en/latest/components/cloud.html says

mybinder.org runs on Google Cloud currently.

but, since the end of April, 2023, we are running on OVHCloud.

Based on https://github.com/jupyterhub/mybinder.org-deploy/blob/58ef831a4d69c1451e046061d3971fb55f11be03/config/prod.yaml, we are using Google Cloud as "load balancer".

We might want to review https://github.com/jupyterhub/mybinder.org-deploy/blob/main/docs/source/components/cloud.md.
