The perfect vegan cookies that Patricia made that one time.
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 cup (2 sticks) Miyoko's vegan butter (coconut based), softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 2 eggs worth of Bob's Red Mill's egg replacer
- 2 cups dark cholate chips
- 1 cup coarsely chopped macademia nuts
- Preheat oven to 375 F.
- In small bowl, combine flour, baking soda, salt.
- In large bowl, beat butter, granulated sugar, brown sugar, and vanilla extract until creamy.
- Beat in egg powder and flour
- Stir in chocolate chips and nuts
- Form cookies from rounded tablespoons
- Bake for 9 to 11 minutes
To make gooey: 8 minutes at 850.
Makes about five dozen cookies.
