- 2oz by weight of soy curls
- 1/2 cup water (maybe less)
- 2 Tbsp miso
- 1 Tbsp maple syrup
- 1 Tbsp soy sauce
- dash of red pepper flakes
Soak soy curls in marinade for 10+ minutes. Remove from liquid, and cook in pan until lightly browned.
- zest of 1 lemon or 8 drops of lemon juice
- 1 cup cilantro and parsley leaves (more parsley)
- 1/2 cup extra-virgin olive oil
- 1/2 cup raw shelled pistachios
- 2 garlic clove, sliced
- 1 tsp Miso
- 1/4 tsp salt (or more, if not making the pesto in combination with the salty soy curls)
Fry the garlic! Then mix everything in food processor.
Serve on pasta.
