It would be nice if we could add a default schema environment property.

It needs to be passed through to the liquibase.properties:
defaultSchemaName: ${DEFAULT_SCHEMA_NAME}

In the underlying specific database images, the defaults need to be set properly, I found this post listing some defaults: https://stackoverflow.com/a/29774936/1283166
