Expose env, volume, and volume mounts in addon configuration

In the Helm chart, there are 3 fields for env, volumes, and volume mounts.

#1165: Expose env, volume, and volume mounts in helm chart for the efs controller and deamonset

These are not currently available in the addon configuration.

Describe the solution you'd like in detail
Ideally, values supported in the Helm chart should be mirrored by the EKS addons configuration schema.

Describe alternatives you've considered
Currently, the only alternatives would be to use the Helm chart instead of the EKS addon, or to patch resources after deployment via addons.

There is a nearly identical request for amazon-vpc-cni-k8s, with the same motivations

Hi @lewayne-aws, we can prioritize this in the upcoming release v2.1.6, there is a release coming on v2.1.5, but I don't think so we can include in it, but will try for v2.1.6.
