Is there any way to utilise CoreTemp instead of Speed fan for temps? Speedfan has not been updated for years, and does not detect any sensors on newer motherboards.

Umm... Please reinstall the skin using the Manual installation method. That's the only version with HWiNFO support instead of SpeedFan. Check the documentations too on how to configure them. And I too couldn't agree more, SpeedFan is pretty dated...
