consult-grep has a history setting like so:

     :add-history (thing-at-point 'symbol)

In some modes, (thing-at-point 'symbol) returns nil. Would there be any harm in using:

     :add-history (or (thing-at-point 'symbol) (thing-at-point 'word))

What is an example of a mode in which (thing-at-point 'symbol) returns nil? This might be a bug in thingatpt.

Indeed. I think it would not do any harm to check both, but this also sounds to me rather like a bug in either thingatpt or the mode syntax table.
