Unfortunately, it seems that recent updates on pymobiledevice3 and/or python itself broke everything.
I was able to lunch SideJITServer by downloading the executable from the last github action and by running from PowerShell 7 as Administrator (not Windows Terminal or CMD or Windows Powershell or at least, none of the worked).
