Default values

Some of the repetition of creating forms could be reduced if we were able to set default values. e.g. in our case, which I appreciate won't be the same for everyone, all our automated emails are sent from the same address so it would be nice if we could define a default value for the email handler's from address.

Note to self: I'm thinking a good way of implementing this would be to create events (e.g., "CreatingForm") that allow defaults to be set.
