Unfortunately it is not possible as for time of writing. Please take look at this line of rqt topic source. QoS profile is hardcoded and can not be altered through GUI. RQT is generally lacking this option and has been a burden in many cases:
Github issues: (ros-visualization/rqt#187, ros-visualization/rqt#295).

Would be nice to add options to configure that on fly (maybe upon right clicking on one or more topics? separate file with regex parsing to set many topic's QoS all at once?). If anybody has good ideas I could attempt implementing them and opening pull request so we call can finally enjoy usability of RQT with non-default QoS settings.
