Ongoing Maintenance for samvera/serverless-iiif

As was the case with #150, my only concern is that, if the project for https://github.com/samvera/serverless-iiif is located within https://github.com/samvera, then there are likely going to expectations regarding where this stands regarding other Samvera projects.

My proposal would please be to just document these, and then ensure that outside parties can distinguish between the following:

• Hyrax (along with Hyrax-related projects)
• Samvera Community repository infrastructure
• Core Components
• Documentation/administration (e. g. the Samvera websites)
