Even tho we have our settings (all of them) set for 15 days (15D) we still can see the graphs showing information for the past month. It seems it's not deleting everything.
Any special considerations?

I did not have more idea and resolution about your issue yet. By default, house keeping is already specified in /opt/observium//includes/defaults.inc.php file. Alternately, you can reach it by going to Global Setting menu and Housekeeping tab on UI.
Note: I am not sure it is whether right or wrong behavior of housekeeping. It may take more effort to review the PHP codes and observe more about housekeeping schedule (with debug mode). Sorry, if I could not help you at this time.
Appreciate if you had gotten the resolution or workaround already.
Hi, I think there is a little confusion.
Housekeeping is to delete FILES that are stale for more than X days, like deleted ports or hosts.
The history in the graphs is there for a fixed time that cannot be changed (well, at least not as easily as you may think).
Anyhow, housekeeping does not restrict the graph's history.
