Better OpenTelemetry tracing

Currently, the operations of the traces produced by the Quarkus OTel extension only groups by HTTP request. This is inconvenient, but changing it will require changes in the quarkus extension.

Another extension upgrade would be the ability to exclude certain paths from tracing/sampling. Currently, the extension supports skipping Quarkus /q endpoints, as well as "resources", but keycloak-resource-urls are not treated as "resources" by the configuration switch.
