Document process for building/releasing UDOIT

There's a process here I've been using to keep this up-to-date.

Generally that's involved just doing a force reset from main, releasing the branch from this repository to this local container registry and applying the changes needed.

This should be documented better somewhere. And maybe it can be improved by #1
