[Feature] Allow generated openapi to be overridden before rendering

Currently there is no way to support security schemes, consumes, produces and other openapi specifications.

If one could override the spec just before rendering, that would be great.
A feature like this could allow control over all features of openapi spec, without having them abstracted in the library.
