Update vesting example doc

Hello, I was hoping to update the vesting example for the Aiken documentation.
I removed Lucid.

This example only uses
Vanilla JS
Mesh.Js
Aiken.

The core of this logic is heavily based on this example that can be found here.

I introduced additional dependencies such as Vodka and dotenv.
This example is in it's own subdirectory as can be seen here.

Also included the projects structure at the end to give user a good indication of what the structure of the project should look like.
