The old version 5.7 is out of maintenance. Updates from 5.7 to 8.0 are supported. We have not detected any unusual downtimes in the cf-deployment upgrade test (https://concourse.wg-ard.ci.cloudfoundry.org/teams/main/pipelines/cf-deployment/jobs/experimental-deploy/builds/766). Nevertheless, a backup is recommended.
