It's time we rip the bandaid off. PHP 7.x is no longer supported effective Mozart 0.8.x and up.
This PR bumps all the dependencies to more modern versions, getting rid of all the legacy holding it back. Since #147 the Docker image already is PHP 8.3.x and we will support one EOL PHP version for the foreseeable future. At the time of this writing, the lowest supported PHP version is 8.0.x.
