Pairs very well with a steak, and makes great leftovers.
- 4 medium potatoes
- 6 large carrots
- 1 medium onion
- 2 tbsp diced garlic
- 6 tbsp butter
- Salt, pepper, and other spices as desired
- Knife
- Oven
- Glass cooking dish
- Aluminum foil
- Preheat oven to 425 °F.
- Cut potatoes and carrots into bite-sized chunks. Cut the onion into eighths.
- Mix potatoes, carrots, onion, and garlic in glass cooking dish. Drizzle melted butter on top, trying for as even coverage as you can get. Season with salt, pepper, and additional spices (if desired) to taste, and mix everything together.
- Cover dish with aluminum foil and bake for 45 minutes.
- Remove from oven, uncover, and stir. Keep uncovered and continue baking for an additional 30 minutes.
