Add new tools: update, serverInfo, insert, createIndex, count #6

- Bump version to 1.0.0 across package.json, package-lock.json, and server configuration
- Add MongoDB operations: count, createIndex, insert, update
- Implement server health check with ping handler
- Enhance query and aggregation with execution plan analysis
- Add server info retrieval feature
- Update README with expanded MongoDB operations documentation
- Simplify MongoDB connection setup
