Added new blocks and refresh prompts

List of changes:

• Update prompts to follow more the style of more recent digests
  • Generally updated the examples to those of recent digest
• Update query for “stETH in DeFi” block
  • Added table graph as well
• Update “Lido on Ethereum” block to describe well for both staking and unstaking cases
• Update “Lido on L2” block to say wstETH instead of stETH
• Update steth APR data to include bps difference from last week
• Add pipeline for “Trading Volume” block, including graph
• Add pipeline for “Lido on Cosmos” block, including graph

Most of the code being introduced is to retrieve exchange trading data, to construct the Trading Volume block (cex_data_loader.py). I also moved the dune/process.py to utils/data_transformer.py, and generalized the contents of the file, to also do other general data transformation tasks.

Also upgraded block writer to gpt-4 from gpt-3.5.
